Just use an entire suit of the wolf armour with wolf fang spear or black metal knife, occasionally using a shield, always having stamina potions on hand.

I really loved knives until H&H; they nerfed the 10x backstab multiplier to 6x.

While they are more Stamina-efficient than other weapons, the raw damage output other weapons of the same tier offers makes them superior with proper Stamina management. Even more so if you're one to carry Stamina pots for burst regen.
