The TLDR is this: If you're having fun, keep playing.
I say play it now. I've thoroughly enjoyed the current gameplay and content. It's got some issues, but overall it's one of the best experiences I've had with a game in the last couple years, maybe longer. I couldn't tell someone not to play it now because they may rob themselves of the experience many of us have had. You also never know what tomorrow is going to bring, so play it while you can.
Since the game is still in EA they may make changes that significantly affect gameplay as development continues, and they may make changes that people who like the current gamplay might not like. I say this because I've been reading up on some of the food changes and I'm not sure I like where they're going with the game. I like the current, simple system they have in place and they're moving to make it slightly more complicated with more numbers and clutter on the UI.
What I'm getting at is getting things just right can be a rather thin line and it is very easy to step over it. I hope that I love what they end up doing with the game because it's been mostly nothing short of amazing so far, but you never know. Even if they were to completely ruin the gameplay (I highly doubt this will happen) it's been worth every penny and I'm satisfied with the fun I've had with Valheim so far.
If you play it now, and like it, you'll very likely be one of the many satisfied customers and there's a chance you may enjoy it even further once development progresses. If not, and you like it now but end up disliking some of the upcoming content or changes, then you had a chance to play the game when the gameplay was in a state that made most players happy with it.
