You can disable auto-save, go to file
\Steam\steamapps\common\Valheim\valheim_Data\Managed\assembly_valheim.dll

Class: public class Game : MonoBehaviour
Method: private void UpdateSaving(float dt)

Just remove everything that is inside of this method and it won't autosave anymore
