As others have recommended, there is Valheim + for starters, it's not without it's flaws.

After 1500 hours in vanilla the game got stale, so i've been playing with mods for the last 400 or so hours. Valheim +, Creature level and loot control, Custom raids, Drop that, plant everything, mass farmer, better trader.

Running around in a world with 5 star enemies makes for a unique challenge. Custom raids is also fantastic once you sort out the configs.
