BepInEx is a mod loader. You're not playing vanilla Valheim.

That being said, you can probably get everything working again by reverting to the previous version of the game while you wait for the mods to update. Right-click "Valheim" in the games list in Steam, and choose "Properties". In the window that appears, select "Betas" in the list on the left, then choose "default_old" from the dropdown at the top-right.
