I don't think stars would really matter personally because from my experience the goal in these boss fights(outside of Eikthyr) is not to get hit in the first place. Maybe with Bone Mass' poison(if the poison is affected by stars), but outside of that I can't imagine it mattering too much. Even then, you have resistance potions to use for him. Most of them are just endurance fights.
