you attract greydwarves and greylings by chopping trees mostly, if you hadn't aggroed them yet you certainly had gotten their attention at some point if you were gathering wood at all. they are forest denizens afterall, they tend to be a bit territorial lol. building near BF as you start your early game is generally a really good way to get combat skills levelled though :)

and as others have mentioned, they like to come out at night so just beware of that aspect, sleeping though the nights does help a ton in the early game to avoid those random night spawns.
