But the thing is, this game is based on a game where you die in 3 or so hits, so you are always going to have to learn exactly how to dodge all attacks of all enemies no matter what.

Naw mate. 200+ hours in and I haven't dodged a single attack. Parrying works just as well - probably better honestly, because it gives you a few precious seconds to land critical hits on the enemy.
