I will mark berries, mushrooms, and particularly large patches of things like dandelions or thistles (though thistles are super easy if you dont mind black forest at night, they glow for quite a distance and black forest is mostly just annoying not threatening by the time you need these for recipes) for the respawn, but when it comes to animals I usually only mark the places like boar stones. Animals wander a bit so they might not always be exactly where they were before but boar stones usually have enough of them nearby that it matters less, at least a few will still be around when i check again later. Necks love water so check shores and rivers, boars love meadows mostly but they also aren't exactly skittish so you dont have to worry about sneaking up on them (i mean, they do startle easy but they choose to stick around and fight, not run like a deer). Deer I often hunt by sound, they bark all the time and if you can hear it, one is close. Just have to spot it before it spots you and snipe it with your bow, even the starter bow with wooden arrows kills them. As long as you pay attention while already out exploring you can come back with a surprising amount of meat each trip.
