Each material has its limit of how high can you place it.
If you try to use a wood at already 8 red limit and put iron beam up, it will not work.

If you wana get even higher the limit, there is a trick you can use.

Clear the area where you want to build and make it as flat as possible.
Go into middle and raise the ground as high as possible you can.
From this ground cone you can now build out (i recomend putting up fireplace on top of this firecone for maximum buff area).

Use the big stone ones as a foundation and place them araund the cone.
Now build the tower in any shape you want.

Thanks. I actually figured out what was going on.
If you try to attach the iron beams onto anything not an iron pole, they have very low stability. I just need to stick Iron Poles onto the location I wanna build the beams up on and that should solve my issues.

In vanilla game( without mods ), there is still a limit to how high you can build, as well as laterally (horizontal) how far out you can build. As you may have noticed "bracing" and other real world techniques for supporting beams, don't apply here. Only thing that matters is how close to a "grounded" object (shown as blue) you are, which can include anything from pillars to rocks to trees, and of course ground.
