No you wouldn't, stacks are ridiculously stupid as a storage mechanism.

It takes 1 full stack of wood (50 pieces) to make a wood pile... and you can fit 2 chests in the same space without even trying... which can store 1200 wood.

The only reason to make stacks is if you like the way they look...
You are right for the second assertion: stacks can be seen as furnitures indeed, to make a workshop look like a workshop.

But for your first assertion, you didn't try hard enough. Stacks can be dropped inside one another if the ground and/or the line of sight are okay. You can even drop stacks of different materials at roughly the same place. I don't know if it is the most efficient way to store raw resources, but it is certainly not way behind a 8-slot chest.

Cherry on the cake, in case this storage is out of a base and is attacked (foraging camp), a chest and nearby workbench are rather fragile, whereas several piles inside each other cause spreading of damage. I use to drop stone piles at the foot of my palissades to strengthen them, for instance (when I don't need stone).

Exploits aside, my comment stands.

Also, chests have more than 8 slots. To be fair, I was thinking 12 slots, myself, but the default chests have exactly 10. See https://valheim.fandom.com/wiki/Chest
