I've played for a while now and I've only encountered one type of bird, boar, deer, skeleton and these things called graybeards.

The game is super neat at first, but it seems like I'm just spending all my time upgrading weapons and armor fighting the exact same mobs over and over to prep for first boss fight.

You may be spending too much time upgrading and prepping. You can beat the first boss with no armour other than the rags you start with, a tier 1 bow with wooden arrows, and a club. I just did this a couple days ago on a brand new character. No shield, no leather armour. Tier 1 club, tier 1 bow, wooden arrows only. The bow broke halfway through the fight so I had to finish that boss off with the club. There's no need to spend a huge amount of time prepping unless you want the fight to be extremely easy. Eat three different foods, grab a stick, and get to work stomping that sucker into the ground.

Things will ramp up once you finish the first boss. You're basically in the tutorial portion of the game until you kill the first boss and leave the meadows.

You will find different tier deer, neck, and boars (zero, one, and two star) and some of the other critters have multiple types, and multiple tiers, as well.

The gameplay loop stays roughly the same - improve your gear, gather more stuff, make better food, explore - as you progress but you get some new game mechanics and systems, or game mechanics that you've already learned show up again in different ways. You'll start running into new critters soon enough.

Enjoy the journey, try not to research too much or ask too many questions. Discovering new things plays a big part in the enjoyment of this game. More than once I was surprised by something, not always pleasantly, but you learn and improve through both success and failure in this game. Plan ahead, have a backup plan, and be careful whenever you find something new.

Yep, it's pretty big. Look at your map then scroll out using the mouse wheel. You'll get some idea of how large because you will be able to compare the size of the area you've uncovered to the size of the entire map.
