There are two different ways to build/craft building pieces/items in Valheim. The first option is to build equipment (like weapons and armor, among other things) at a workbench (which needs to be roofed and protected from the elements before you can do this). This brings us to the second buildng option: In order to build a roofed workbench, you need to equip the hammer itself in your hand and right-click with your mouse - this will open up the build menu where you can select different building pieces (walls, roofs, and floors, WORKBENCHES, for example) from several ledgers. Placing those building pieces requires a left-click with your mouse cursor pointed at the desired location for the building piece (snapping building pieces at one another is easy with some practice). Pressing the middle (third) mouse button allows you to destroy/remove building pieces without any material loss (this is not possible for equipment like weapons - those can only be destroyed by building another item later in the game).
Please note that you can build the hammer without a workbench (press TAB and select the hammer in the right-side Crafting menu - this requires you to have the required materials to do so (a few stones and some pieces of wood). You also need to have the required materials on your character for both building/crafting methods. Also note that you will "discover" more crafting/building items the further you progress into the game (by picking up all items that you discover).

PS: Repairing equipment: At the workbench, you can see a hammer symbol on the right-side Crafting menu - if the hammer blinks (gold colour?) you can repair any damaged items for free (please note that higher-level equipment may require a certain "workbench level" - this level can be increased by building additional items (tanning rack, etc.) within a 2-meter radius around the workbench. These workbench extensions (name?) become available after you have discovered them in the game).
Repairing build pieces: In order to repair build pieces (for free!), you need to have the hammer equipped in your hand and select the "Repair" option in the first ledger of the hammer crafting menu. Then just left-click on the build piece(s) you want to repair.
