Dodge or do a short sprint away as they try to attack instead of trying to parry. Their swing is slow enough to get away from it. Space bar while blocking will dodge roll. Use a spear, they don't like piercing damage. Don't use blunt weapons, they're resistant to those. Kite them with a bow and if you do it right they'll never, ever hit you.

Also remember that one and two star trolls hit harder than the basic version.

Also, from the wiki (I don't know if this has ever been fixed, but could explain your issues):

The unarmed Troll's ground slam attack is bugged and does two instances of damage. The first is the main attack, doing up to 70 damage unmitigated, the second deals 0 damage. This second damage instance allows players to stagger the troll by parrying with any amount of block power, even if the player can't parry all of the damage of the main attack.
