Only you will be able to answer your question of whether or not you will "personally enjoy it."

I really don't consider it a "survival" game.
As stated by Psymon, you can't starve to death - eating (a variety of) food just builds your HP and Stamina.
Getting your @$$ handed to you and dying, as you explore the map and gather the resources you need to craft items to upgrade your weapons and armor, is how you learn what to do and when it is smart to do something and when it is smart not to do something (like traveling through the Plains at night).

There is what some would refer to as "repetitive" work (mining, gathering resources, farming and cooking), but that is all part of the game. But as you take part in these activities, it is the random things that can happen to you that makes it so fun (like heading home from mining copper only to run into a Troll, and as you are fighting him off, have 5 or 6 Greydwarves and friends start chasing you, and as you move away while taking them on as well, have a Boar start in on you ... then run by a Neck, who, of course can't leave you alone either).

Valhiem wasn't really a game I would have considered "my type of game" when I bought it for $19.99, but today I consider it the BEST money I ever spent.

I would recommend this game to anyone, all the while knowing that the game isn't for everyone.
