Food, rested/dry/warm status, potions, timing, using the environment to your advantage, weapons, powers and so on can help with stamina management in most cases.

20 Greydwarves chasing you? Staghammer will make short work of them and get you a ton of resources for their trouble.

1 big scary enemy? Time your attacks well, don't waste stamina rolling around when walking / strafing is just as effective and use the terrain to impede the enemy or make it path to you in a way that allows you to regain health or stamina in order to deal with it + potion/power if need be.

Sometimes retreating is also the best choice especially if you are exploring and do not have an easy portal to access for a body run should you die.

Fighting a big rock golem I'll move around on hills or ridges to try and jump on it with a pick axe for higher damage and hopefully not getting hit by it's attack while doing so. Or just pop bonemass to kill it.

"You are being Hunted" event I'll find a nice boulder nearby and then range the wolves down until there is a pile of resources by the time the event is over (unless they somehow glitch up the rock resulting in me being pushed off and dying due to forgetting bonemass or trying to jump back up on said rock lol).

Knockback and other crowd control effects can also be of some use.
