You know you could play with what? Without mods? Yeah, or you can wait for the mod authors to catch up so the mods don't break stuff. Those are literally your options, in most cases.

That being said:

Check the mod's pages, they might have suggestions on how to deal with the new update; it apparently broke something in BepInEx (which loads the mods into memory), which is why there's more than a few discussions talking about it right now.

Use the search field at the top-right of the Steam forums to find the discussions about how to fix it.
