I killed my first troll buck neked using a spear by rolling and throwing multiple spears. I could understand your frustration with the spear too as It was my main weapon as well until I got the atgeir but imo I think they wanted the spear to be thrown and a cost effective alternative on multiplayer.

My advice with rolling is to roll to the side when troll swings downwards and towards the troll when he does a sweep and in the plains biome later in the game you will have
to face fuling berserkers they're attack pattern will be the same with trolls just attacking more often and has a 3 overhead strike so learning to fight a troll in melee will make you quiet an expert for the rest of the game. You want to block and to roll a lot when taking on tar monsters too so it's a learning curve that was intentionally put there as it's very useful if you want to master valheim melee combat but you can always just circumvent it with using bow and arrows and other strategies for lesser gamers.
