I just kite them around in circles in an area where there are a cluster of trees or some other barrier like a tower. Before luring them there, I would shoot from quite a far distance as much as I could. I wear Troll Hide Armour which does nothing to mitigate its damage, wield an upgraded Fine Bow, and use Flint Arrows. It usually takes about 15-25 arrows, fully drawn to mostly drawn to take it down. I eat cooked deer and boar meat, then some other fruit.

Note, don't try to kite him near water. I made the mistake of crossing a shallow pool, when the tide came in... [sigh]

With that, it should take about 3-ish minutes to take it down.
