Honestly, if crafting and building is not your thing, or survival sandboxes in general, I would not buy this game, unless you don't mind spending the money (it's really cheap right now).
You probably might be better suited with straight action titles. Which Valheim is not.
Combat is pretty straightforward, you block, you parry, you hit, you dodge. There is no real character development besides getting better food and better armor. There is no real PvE besides battling monsters, currently five bosses and some dungeons.
That said, this game features an enormous world, that is procedurally generated from a random "seed" any time you create a new world. It is a lot of fun exploring this huge world, sailing the fair (or not so fair) seas, where you really feel like a viking of yore.
You gather, you mine, you sow, you harvest, you craft, you can build anything from small huts over bigger farms to large stone houses or even castles.
You explore increasingly more dangerous regions of this world. You need to be cautious and extremely careful, because if you are not properly prepared, you die quickly and you will lose EVERYTHING that was on your body. Yes you will wake up naked in your bed.
This sounds daunting at first, but once you know how to fight, how to prepare properly, you will slowly become the master of this world.
I honestly can't think of a better game right now where I have spent almost 1,000 hours in.
Just be prepared that a very large part of this game is not spent fighting. If that, PvE, progression and boss fights is what you mostly care about, this is not your game.
For me, it's (almost) my dream game come true.
Edit: To add onto what @blprice61 wrote: This game is just simply beautiful and stunning to behold. Don't bother about the rough pixelish look. Just look at those beautiful sunsets, or fog, or the storms, or the blizzards... I could go on and on.
