I have had troll hide and gold despawn on me, I knew it is a possibility but I had to get back to a chest with my inventory as I was full of meat at the time. I marked the locations of the trolls I had killed, managed to get to one of them, but the others despawned.

Build a campfire or crafting bench and items will not despawn nearby. It isn't the game at fault it is you op.
