Bow with fire arrows, troll armor and just hide behind the pillars for protection. No need to start some excavation project and what not. You can kill him in 5minutes.

At least you can grab one from another save and use it. Things like the maypole or jack o turnip need to be made in that save.

Just get on thunderstore and see whats out there. My only suggestion is to NOT use any of the huge package mods like Valheim+. there's just too much in them that you could potentially not use or even ..
