You stated you deleted all valheim folders before a reinstall.That should clear out any mod or corrupted files unless you have a mod manager polluting your install when you start up.

Check your Valheim installation folder (Steam\steamapps\common\Valheim) and see if there is a folder called BepinEx. Re-name it if so.

Personally I started a new character in a new world. I have not tried to access/sync any old worlds or characters. But it sounds like you are not even getting that far?

sounds like most of your issues are mods related, which arent supported, and the lost ore might be lost connection/desync or world not saving
