Somethings can be added to already explored maps, most things cannot, its a good idea and will give you an overall better experience by remaking the server once the update hits.. if you like your map ..

I jumped out of the boat close to shore then swam ashore. The serpent continued to attack the boat while I attacked with arrows. Everything was close enough that I had no issue recovering materials.

First of all, you don't need to keep it harpooned all the way, just let it follow the ship. It has to be able to hit the ship once per minute though or it will lose interest so slow down occasionally...

Go all in with stamina food. Not really needed but can help. If you checking the stamina you will soon discover that it does not always drain stamina when sailing in to shore.

The meat floats, the scales sink. Makes sense. If you want the scales, pull it to shore.

I use a mod to make all drops float on top of the water.

it's both, they did update the game for a bit of optimization , back when the optterrain command was released.. but instances , generated by both modifying terrain and building , and putting ♥♥♥..

If you lost a significant amount of gear, I would enable console and replace those items in a separate world from the one you play on. I have had this happen, but luckily I only lost a few consumables..
