As weird as it may sound, the greydwarf brutes (not the regular annoyances though). They are really nothing special and ultimately still pretty annoying early game mobs, but they are also the first thing I got the perfect parry down for and that was a massive confidence boost (that continued to carry the rest of the game, parry is awesome) when I first got into the game. Even now I have fun just messing with them.
