Is your armor upgraded? I remember being able to eat a couple of shots before I felt like I was in danger of dying. Assuming I get hit by it anyways. You can very easily disengage for a moment to let yourself heal up enough to not die from the next hit. Just find a clear little space you can roll around in and go to town on it.
