I would recommend avoiding Early Access, Beta, Alpha games in the future if you find it difficult to enjoy the ongoing development of a game that will be filtering content in on a sporadic schedule.

The advantage in doing so would be the ability to enjoy a game in it's entirety as opposed to a prolonged "stop and go" sort of situation. Disadvantage is that you will then have zero early feedback to give to developers while dealing with "fear of missing out" as you'll know other people will be enjoying the game despite it being incomplete.

Best advice for one who goes into Early Access type games is to have a handful of other games that you can bounce back to or preoccupy your time with while allowing a game such as Valheim the time it needs to "percolate" so to say. If one really enjoys the game and can continue to play it despite being incomplete - go for it.
