Not as much as you'd think. Seems like creatures in Valheim would rather fight each other than fight you. One way I like to lure one to the other is with the bow. For example, If there's a goblin village and tarpit nearby, if I position myself so the tarpit is between me and the village, I'll fire a few arrows into the village. They'll come to investigate and run into tarpit and fight it out with the growths till someone wins. By that time I'm either long gone or picking off enemies from a distance and thinning the herd.
