The best way to do this is looking for meadow biomes with steep alpines where trees are located, so when you cut one down, the hill will automatically try to roll the other ones down.
It's usually best to try to force the trees to fall in a direction, maybe build structures to grip the side of the tree you don't want to fall down on?
Falling trees does not outright destroy a structure so you could also force trees to roll in a specific direction on top of one another down a hill maybe, using the sloped beams.
Also, a field of fallen logs makes for a awesome pathfinding blocking against monsters in general, they don't attack it like structures when it blocks their way of getting to your base.
I wish we could harpoon or grab logs and transport them as is, to make traps out of them...
