I have seen both, after it got fixed. First one despawned, and I lost it after capture, and the second one I actually was able to tame, so, yeah.
1. Technically yes, but also no, so not sure what happened with my case, but they don't despawn if you do manage to capture one, so it can be done. Also night wolves now continue to tame during the day, can confirm.
2. No, not at least if you are prepared and have a mate for said wolf (even if it is just a no star wolf, you can still get a chance of a star wolf cub from that breed). Besides, first thing you do after you tame the wolf is probably going to be given the follow command, after that, you can take them wherever you need to take them too, so that shouldn't be too much of an issue.
3. No, in any case, they never despawn any cub offspring from any wolf you tamed, will not despawn, those cubs are keepers, so look after them.
Also just a disclaimer, if you tame 2 of any star parent wolves, (eg a one star & a 2 star) they always make another star wolf cub, just takes a while to get specific star type.
Also, it helps to scout out wolf spawns during the day, (preferably when sunny & no blizzard) to mark on the map so you know where to look when it is night time, so you can go around & check the spawns to see where any 1 or 2 star wolves are. Another tip of mine is to take a harpoon, so you can set them to follow you, and then harpoon them out of the pit (if you dug a pit) after they are tamed.
And one more thing. If you dig a pit to capture a star wolf into, and you are able to kite them to the edge of the pit without attacking them, don't be afraid to whack them once just to stun them, then use your shield to push them into the pit, and throw the meat in there with them, as they regain health again from eating anyway.
