its a survival game it is a grind if something like this make you wanna quit maybe you dont enjoy survival games like you thought im not criticizing but grinding is survival game at least most what makes a game fun to you?

I don't mind grinding, as I said I enjoy lot's of other things in the game that are still very grindy, I don't even mind mining in most games, infact I often enjoy it, but valheim doesn't do mining very well, which is fine, the issue arises with how little ore you can carry in one trip versus how much you need. Just because something is a grind doesn't mean it shouldn't be engaging.
