Also, regarding the topic. You used to be able to very simply set each game to "never update".
I used that for quite some time back in Vermintide 1, when the best way to get the red executioner sword was to have every other red item in the game and rush the second map of a DLC whom's name i have forgotten where you can obtain it. However it had a boss fight in it which when done solo was extremely difficult as bots are a bunch of idiots. But there was a wall jump you could pull off to skip the boss fight and run towards the exit. I saw an update, i knew it would be fixed and reading the patch notes confirmed it. So i never updated it and just played the old version solo. No one could join me, but it was well worth it.
Nowadays, they removed that function (looks like epic isn't the only one evolving backwards), so you can't do it easily anymore. As stated above, you can fool Steam into not updating.
