When you plant a carrot, you will get 3 seeds from it. It's a good idea (I think) to replant all your carrots at first to build up your seed stock. Once you have a decent supply, you can plant a bunch of seeds, harvest the carrots, and then replant 1/3 of the carrots to get your seeds for the next crop.
