Its honestly hard to prep for 2* enemy or even 1* early game ones. You simply won't have the food & armor to go around with most of them, and you either need to stagger them with surprise or avoid them or if something melee, kite and shoot. I just restarted the new content and first thing I got was dead to 1* skelly shooter that got into the meadows from somewhere. I probably could have taken a normal one, but he just hit too hard.
