I've never seen any enemy do that so far. Obviously some of them move around and try to escape, and the enemies seem to have basic AI patterns like attack > run around a bit > attack again > repeat, which can make them seem like they're being evasive, when in reality they're going to run around like that whether you're attacking them or not.
