Take a good look at how the game plays itself in an unmodified state (i would recommend to get to the next progression biome (terrain type) after the second "boss" at minimum so that you can see by yourself how the game works and how the difficulty scales up (there are basically two sides here: too easy and too hard; i would not care about other player's opinions here). Then come back and ask the question again - or - utilizing your own impressions - go to Valheim Nexus or to Valheim Thunderstore and see what mods are on offer and choose the ones you think you "need" to fill in any gaps in the game: QoL mods, difficulty level, new stuff, new mechanics, etc.
Most mods are configurable (either ingame by an additional mod or extension to a basic and required mod framework (cant answer here as i use the next method by myself) or by editing relatively easy to understand config files. The good thing with this is the fact that you are able to fine-tune most of the changes from the mods as you like (within the given parameters, of course).
Depending on how much you already know about the game: i had a fun time playing the (unmodified) game for the first time back then without knowing much about it ;)
