So as long as I play on my PC alone with no other players or him and do stuff it is basically offline and doesnt do stuff to his server. How would we play together then?

Its your world, you can play it singleplayer or host it. He needs to start hes own world if he wants to play alone, toons are not tired to a world nor is the othe way around.
