I'd suggest not taking what's in that article as gospel. The H&H update isn't out yet, and the numbers shown on the video may not be accurate to what gets released, those may just testing numbers (I personally don't know for sure either way, I just know when I do demo vids of software the numbers shown are not always valid, they're just for example).
Speculating is fine of course! But I wouldn't invest time in getting upset or worrying too much before you even get the reality of the H&H update and everything it contains.
And even if the numbers are correct, you don't need to take more than 3 types of food on every trip. You just decide what you're doing and take the food you need, which is like you do now. In fact, you'll have even more ability to tailor your meals for your trip purposes. Going to tend to your crops? Pack your stamina meals. Going to go hunting? A balanced tuck kit will be better. Combat? Depends on your combat style to some degree.
If you're a "better safe than sorry" planner like me, you will keep different food types at your outposts to save time if you need to switch out your tuck.
I'm sure most players aren't taking max stat food for every expedition out of their base if they're going to do something routine as well.
I already don't just repeat the same 3 meals for every task. If I'm just going mining at a place I've already scouted, I don't bother loading up with high HP food as I'm not going to focus on combat (I always build up a retreat base if I get unexpected visitors!), in fact I may only take sausages and pick berries to supplement. I only go to the effort of making 3 "big" meals if I'm going on a long or dangerous trip.
This is a survival game after all! We have limited space & limited resources, every expedition needs to be thought about and geared for accordingly. That's a specific part of the appeal of this type of game.
There are mods if you want to have an easier game experience.
Don't forget, we're getting MORE food items too, so there's going to be additional options & combos beyond what we know now :) I'd suggest that calling this a nerf overall is a bit premature. Sure, some individual food items that you know of right now may end up with lower stats, but that will be because there's new options that I am sure will allow for better combinations.
