Weapon durability is a bit of an issue, but you mitigate that problem by not relying solely on just one weapon type as well as increasing your skill (both weapon skill and skill at game in general).
Eating more or better stamina food makes less impact compared to health. You don't regen your stamina faster, but you regen your health faster with more health food.

The only thing you change about eating stamina only is, that you have a bigger empty stamina bar. My stamina bar is always nearly zero. It doesn't matter how big my bar is, as soon some stamina comes in, I consume it. Get the timings right of fights in which you can regen is the key.

The only thing makes a difference is the regen time. You have a potion in Mistlands for that. I tried it, but I personally feel nearly no difference with 25% more regen speed. Our archer on the other hand, used this potion with a lot of impact. I don't play with bow since a few 100 hours ago, so I don't know if this statement is true.
