Developers all work at different speeds, its not just the size of the team that matters.
For example take the developers from Deep Rock Galactic from Ghostship games. They are only a 4 man team and pump out a lot of content.
Stardew valley is a game by ConcernedApe a 1 person team that does the art, coding and even music.
But not all development teams are like that ofcourse, and depending on how much needs to be reworked, and concepts that get scrapped. It can take a long time for something to get released.
I have to say that the developers of Valheim are some of the slowest i have seen, development wise.

I would say, just start playing. There is a lot of content already in the game to enjoy and most of the game mechanics are there already.
Even the developers dont know when the game will be released, so its better to just play and enjoy what is there already.
If you get tired of the game, you can always revisit it after 5-10 years.
