It is on your hammer menu after the item the upgrade is for.so for example in crafting tab all items between the workbench and forge are workbench upgrades etc.

Also you need a bit of luck with the cave size. In the first one I went I got 40 hair. In total I've found 3 caves, was enough to build the whole set lvl 1

You should also loot the ones hanging on the walls. And you can destroy the decorations to get more. I don't think I've found any caves with 14 or less.

Eh, I really can't see how the world seed would directly affect pigs.

Wraiths during the day were added in a recent patch. They're fairly rare, but as mentioned, will spawn at the wooden shacks found in the swamp. This was mentioned in one of the patch notes.
